At present, there are two types of filling machines on the market based on their principles: one type uses extrusion as the feeding method (the dough is squeezed out by a screw), and the other type uses flat feeding (the dough is pressed out by a roller).


Let's first analyze the extrusion type. The dough of this filling machine is formed into a cylindrical shape through spiral extrusion. The advantage of this filling machine is that the structure is relatively simple, the machine volume is small, and the space occupied is relatively small. Of course, the cost of this filling machine is also relatively low. The major disadvantage of this filling machine in the biscuit production line is that the dough is extruded through a spiral, and during the extrusion process, the dough will generate heat due to friction, accompanied by the strong pushing of the spiral, causing damage to the dough structure. Therefore, the taste of the buns made is relatively poor. For example, some dough may not rise up after waking up, and the steamed buns may have sticky and soft skin.


Another feeding method of the filling machine is to press the dough into dough through a pressure wheel. This method is similar to the effect of using a dough press machine to press the dough, which can make the dough structure uniform and more elastic. Because this molding method is based on the same principle as manual production, the resulting buns have the same texture as handmade ones. However, the disadvantage of this filling machine is that it has a relatively large volume and higher cost.
